Man you porchetta looks ridiculous! i dont have a c vap but I have a circulator. what temp would you recommend? and for how long. mine is the full piggy not split as yours.
I would cook it in a spa at 67 c and pull it at 62.5, let it steam off for about 30 minutes then submerge it in a ice bath for 3 hours or till the internal temp drops below 45 c then let it rest in the fridge over night.
