Apprentice/Intern

 

Education has always been a strong component of the 4505 Meats philosophy. In fact, the company was founded when Ryan was working for a non-profit organization, teaching professional cooking skills to people re-entering society from challenging circumstances. We will continue our butchery classes and strive to provide a high level of support for our dedicated customer base, but for the aspiring or current food professional looking to gain experience in meat production, you must completely immerse yourself in the craft. That is why we are happy to offer ongoing apprentice/internship opportunities to people who are willing and able to make a serious commitment.

We are passionate about good meat and therefore it is the driving force behind what we do. Whether it’s at our Farmer’s Market locations, our brick and mortar butcher shop, or the weekly CSA meat program, we strive to provide the highest quality product. Working with local farms and ranches and dealing primarily in whole animal sourcing means every week is busy and presents unique challenges. That is why it is of the utmost importance that apprentice/internship candidates are serious about fulfilling the requested requirements.

The ideal candidate(s) possess the following attributes:

-Ability to work with a sense of urgency. We like to have fun and connect on a personal level, but this is not a relaxed job. This is a constant race against time, and you should have the desire to perform at the highest level.
-Willingness to do any task requested regardless of your experience level. The most fun part of the job is only a portion of the entire process.
-A serious commitment to learning and working in a professional kitchen environment. While professional experience is not required, a professional attitude, work ethic, and all of the associated qualities are expected.

Available positions and descriptions:

Full time apprentice: This is a total immersion approach. You will be working with the lead butcher and kitchen manager on an ongoing basis to help support production. The requirements of this position are as follows:

-5 consecutive days a week, minimum 8 hours a day
-Most likely schedule: Sunday through Thursday, though may be flexible for the right candidate
-Minimum 3 month commitment, mostly at our Hayes Valley, San Francisco production kitchen location

What you will learn:
-How to handle, sharpen, and maintain a knife for cutting meat
-General animal anatomy, cut specifics, and other information
-Sausage production and cooking techniques, value added products
-Small business perspective and professional kitchen experience

Example of weekly tasks:
-Cleaning meat from bones and separating usable meat and fat
-Vacuum sealing portions, labeling, and organizing inventory
-Sausage mise en place and production, percentages and recipes
-General kitchen duties including cleaning, organizing, prep, etc
-At least one shift at the retail butcher shop location, which will include a combination of all tasks in the setting of a brick and mortar retail operation

Part time internship: For people who may currently be employed or have other time constraints, we offer a 2 day commitment that will provide basic meat processing skills and professional experience. You will be working with the lead butcher on an ongoing basis to help support our whole animals operation.

-2 consecutive days a week, minimum 8 hours a day
-Most likely schedule: Sunday and Monday
-Minimum 3 month commitment, mostly at our Hayes Valley, San Francisco production kitchen location

-Small business perspective and professional kitchen experience
