Our Process

Here at 4505 Meats we receive local, pasture raised whole beef, pig, lamb, goat, chicken, duck, and rabbit on a regular basis. Each week we process these animals into various cuts, steaks, chops, roasts, and grind. With what is leftover, such as skin, bones, and organ meats, we create sausage, stock, pate, terrine, and other seasonal goodies. Out of respect for the animal, farmer, and craft, nothing goes to waste. From this process we fabricate fresh Farmer’s Market offerings, supply our daily changing butcher’s case, and offer weekly custom CSA packages. We regularly make these items available at our multiple outlets, offering a variety of pickups, delivery, and other options to best fit your schedule.¬†What we have available is constantly changing based on what is fresh and available for that week. If there is something you want and we don’t have, we also accept custom orders. Even if we can’t fulfill them immediately, we can plan for the next round of animals that we have coming in. Our process is unique for a few reasons, but mostly for the fact that just about everything is hands-on and cut with our own knives. This is the way that we like to eat and share meat with our family, friends, and customers.
